KOHYAMA

Based on dashi and Japanese fermented seasonings, the dishes are created by blending Japanese and Western elements.

Not only does the food and sake have a synergistic effect, but the pairing by the Kohyama couple also creates a wonderful marriage.

We aim to be a restaurant that can only be run by people born in Nara.

Nara Prefecture, formerly known as Yamato Province, was the capital of Japan and is said to be one of the birthplaces of Japanese food culture. As an inland area without access to the sea and with a history where Buddhist culture is deeply rooted, a unique food culture has developed there.

The couple opened a restaurant hoping to let people experience the charm of Nara.

Enjoy original, creative cuisine made from ingredients from the historic Nara region, which captures the powerful vitality of this land.

We want to convey the appeal of Tenkawa Village's ingredients

Tenkawa Village is located in the center of Yoshino District, Nara Prefecture, and is blessed with abundant nature and pure water.

The sacred site of Yoshino-Omine, which is a part of the "Sacred Sites and Pilgrimage Routes in the Kii Mountain Range" and the pilgrimage route "Omine Okugake Trail" have been registered as UNESCO World Heritage sites along with Mount Koya and the Kumano Sanzan.

This is the only registered road in the world, along with the Pilgrim's Route connecting Spain and France.

Ayu, which are raised in the high-quality water and low temperature of the clear stream (Milky Way), are beautiful looking and fragrant river fish.

This is an indispensable item at KOHYAMA.

You can enjoy different flavors depending on the season, and young sweetfish caught right after the ban is lifted have soft bones and are served as "sashimi" (sashimi).

In July, when the fish is fatty, it is grilled with salt.

After Obon, females with eggs and males with milt are called "roe-mochi ayu" or "ni ayu."

We offer sweetfish dishes that change with each month.

(The ban on ayu fishing is lifted from June to October.)

Nara Prefecture is an inland prefecture that does not face the sea, but it is deeply connected to the sea through its mountains and flowing waters.

The rain that falls on the mountains of Nara functions as a "source of water" that ultimately brings blessings to the sea through the rivers.

Saikazaki Fishing Port in Wakayama Prefecture, where we visit in search of seafood, connects the Yoshino River in Nara with the Kinokawa River in Wakayama, forming a "waterway" that connects the mountains of Nara with the sea.

The appeal of buying fish directly from fishermen is the guarantee of freshness and quality. Fish freshly caught by local fishermen tastes different. Also, directly dealing with fishermen provides a valuable experience that allows you to experience the local culture and fishing stories.

We produce original Nara wine from Nara grapes.

Since 2024, the couple has been cultivating and harvesting their grapes in a Delaware orchard in Kawai-cho, Nara Prefecture. The wines have been brewed under contract with Kitani Wine, Nara Prefecture's first winery. Please enjoy the climate and terroir of Nara.
