​​KEISUKE KOHYAMA

​ Representative Sommelier

Born in 1971 in Yamatotakada City, Nara Prefecture. From the age of 18, he spent 22 years training at Kinan Shokuhin, a delicatessen restaurant run by his father. I started helping out when I was a child, and by the time I could remember, cooking and interacting with customers had become my daily routine. In 2011, he opened “Japanese Food, Sake and Wine Kinan”. Fascinated by the wonders of wine, he became a JSA sommelier, and after managing Kinan for 10 years, he sought a new style and opened "Restaurant KOHYAMA" in 2021. In 2022, “Wine Shop KOHYAMA” will start in Kashihara City.

​SHIHO KOHYAMA

​​Chef

Born in 1980 in Tenkawa Village, Nara Prefecture. Grow in nature. At the age of 6, he discovered the joy of cooking the moment an elderly woman in the neighborhood praised the cream puffs he made with his mother as delicious. After studying nutrition and obtaining a nutritionist license, she married Keisuke in 2003 and became a partner in business. Obtained JSA sommelier qualification. In charge of the chef at "KOHYAMA". For summer sweetfish dishes, he catches and cooks the sweetfish himself in Tenkawa Village.
